Ingredients: Ackee and Saltfish Fritters

  • 2 cup saltfish (salted cod)
  • 3/4 cup all-purpose flour (more or less)
  • 1/2 cup water
  • 1 can ackee (this can be omitted)
  • 1 1/4 tsp dried thyme
  • 2 Green onions, chopped
  • 1 tsp baking powder
  • 1/4 Scotch bonnet pepper,minced (more if you like it spicy)
  • 1 egg
  • salt and pepper (if you removed to much of the salt from the fish)
  • 2 cup oil for frying
  • 2 garlic cloves,minced

How to Make Ackee and Saltfish Fritters

If you have prepared the ingredients needed, now time to start cooking. There are 6 steps you must follow to make Ackee and Saltfish Fritters in your home by yourself.

    Step 1
  • Soak saltfish for couple hours to remove excess salt. (You could also boil the salt fish, drain then bring to boil again, cool then continue with the rest of the recipe)
  • Step 2
  • Drain and rinse the can of ackee and set aside.
  • Step 3
  • Shred the saltfish in a large bowl.
  • Step 4
  • Add the rest of the ingredients, except the ackee and oil and mix to combine.
  • Step 5
  • Slowly fold in the ackee, trying not to mush it too much (you want some bigger pieces in there)
  • Step 6
  • Heat the oil in a pan to medium, drop spoonfuls of mixture and fry until golden brown. ENJOY! 😊
