  • 1/2 cup uncooked rice
  • 1 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp fresh mint chopped
  • 1/2 tsp thyme
  • 2 tbsp minced onion
  • 1 tbsp minced bell pepper
  • 1/2 tsp garlic powder
  • 2 cup bread crumbs
  • 1/2 cup milk
  • 6 medium carrots chopped
  • 3 large potatoes chopped
  • 1 each chiote chopped
  • 2 each zucchini chopped
  • 1 can tomato sauce 8 oz
  • 1 large tomato chopped

How to Make Albondigas (meatball soup)

    Step 1
  • Take first 5 ingredients, sauté onions in a large pot then add remaining 4 ingredients set aside.
  • Step 2
  • Put chopped vegetables in a bowl and set aside.

  • Mix remaining ingredients together and form in to meatballs.

  • Bring stock to a boil carefully add meatballs and simmer for 25 minutes
  • Step 5
  • Add chopped vegetables and cook for another 30 minutes. Check to see if vegetables are done.
