  • 1 lb ground beef (or turkey)
  • 1 cup uncooked long grain white rice
  • 3 carrots (peeled and chopped)
  • 3 small zuchinis (chopped)
  • 1/2 onion sliced
  • 1 tsp ground cumin
  • 1 onion powder
  • 1 garlic powder
  • 1 kosher salt
  • 1 ground pepper
  • 6 cup chicken broth
  • 1 tbsp oregano

How to Make Albondigas

If you have prepared the ingredients needed, now time to start cooking. There are 5 steps you must follow to make Albondigas in your home by yourself.

    Step 1
  • In bowl, mix ground beef, rice, salt, pepper, cumin, garlic powder and onion powder.
  • Step 2
  • Form into golf size balls and place on tray. Once done refrigerate for at least 10 minutes. This will help the meatballs stay intact when cooking.
  • Step 3
  • In pot, place chicken broth, carrots, zucchini, and oregano. Bring to boil over high heat. Cook until vegetables are tender. 15-20 minutes.
  • Step 4
  • Add meatballs and cook over medium heat for an additional 30-45 minutes.
  • Step 5
  • Serve with warmed corn tortillas.
