  • 400 grams carrots, peeled and sliced in cubes
  • 250 grams apricot, peeled, sliced in cubes and dashed with flour
  • 300 grams sugar
  • 300 grams flour
  • 200 grams vegetable oil
  • 3 large eggs
  • 2 tsp baking powder
  • 1 butter, for greasing the tin
  • 1 pinch of salt

If you have prepared the ingredients needed, now time to start cooking. There are 9 steps you must follow to make AMIEs Carrots & Apricot Bread in your home by yourself.

    Step 1
  • Heat the oven to 180ºC and grease a loaf tin.
  • Step 2
  • Sift the flour, baking powder, pinch of salt and sugar together in a separate bowl.

  • Put together the carrots and oil in a blender, blend until well combined and transfer into a mixing bowl.
  • Step 4
  • Add and beat in the eggs one at a time, adding a little of the flour mixture with the last one.

  • Gradually add the remaining flour, until well mixed and a soft dropping consistency.
  • Step 6
  • Add the apricot and stir gently. Pour the mixture into the tin.
  • Step 7
  • Bake for around 50 minutes until golden brown and done.
  • Step 8
  • Leave to cool in the tin then turn out into a wire rack and leave to cool completely before cutting into 12 slices.
  • Step 9
  • These are best eaten on the same day as making and after. Serve with coffee or tea. Share and enjoy.
