  • 180 grams baking flour
  • 180 grams sugar
  • 200 grams coconut, grated
  • 60 grams butter
  • 15 grams baking powder
  • 150 ml warm fresh milk
  • 1 egg
  • 1 grated rind of 1 lemon
  • 1 icing sugar

    Step 1
  • Sift dry ingredients together. Cream butter, adding sugar gradually, creaming well. Add unbeaten egg. Combine warm milk and grated rind of lemon.

  • Step 3
  • Pour into a loaf tin, well greased. Bake at 180°C for 45 minutes. Cool. Cover with icing sugar, if desired.
