  • 500 grams pasta (farfalle or fusilli)
  • 1 medium eggplant, diced
  • 3 zucchini (diced)
  • 1 medium bell pepper (diced)
  • 1 small red onion, (sliced)
  • 400 grams tomato puree (passata)
  • 1/4 cup olive oil, extra virgin
  • salt and ground black pepper
  • 1 basil leaves
  • grated parmesan cheese

How to Make AMIEs Pasta with Vegetables

If you have prepared the ingredients needed, now time to start cooking. There are 3 steps you must follow to make AMIEs Pasta with Vegetables in your home by yourself.

    Step 1
  • Heat the oil in a large sauce pan over low-medium heat. Add the onion and saute until softened. Add the washed and diced vegetables and cook for 10 minutes. Add the tomato puree, salt and pepper and cook for a further 15 minutes over medium heat. Add the basil leaves cut in pieces.
  • Step 2
  • Cook the pasta according to the packet directions, until al dente. Drain and place in a serving dish. Add the prepared sauce and parmesan cheese to taste. Toss to combine.
