  • 1 1/2 cup Raisins
  • 2 cup Water
  • 1 1/4 cup Sugar
  • 4 tbsp Flour
  • 1 Egg, well beaten
  • 1 Juice of a Lemon
  • 2 tsp Lemon Zest
  • 1 pinch Salt
  • 1 Pie Crust, enough for a double crust

    Step 1
  • Preheat oven to 400°
  • Step 2
  • If your raisins are soft then you are good to go. If they are hard, soak them in a bowl of water for three hours prior to beginning the pie making. Be sure to drain them well.

  • Line a pie pan with bottom crust.
  • Step 4
  • Combine all ingredients in a large bowl placed over a pot of gently boiling water. (A double boiler)
  • Step 5
  • Cook mixture until it bubbles, about 15 minutes.
  • Step 6
  • Pour into pie crust. Cut top crust into strips and arrange in a criss crossed pattern.
  • Step 7
  • Bake at 400° for 10 minutes. Reduce heat to 350° and continue baking for an additional 30 minutes or until crust is golden.
