  • 1 1/2 cup Quinoa
  • 3 cup chicken broth
  • 1 cup Chopped cilantro

  • 2 tbsp butter
  • 4 Juiced Limes
  • 1 tsp ground cumin
  • 1/2 tsp ground black pepper
  • 1 tsp sea salt
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1 tsp cayenne pepper
  • 3 tbsp Nutritional Yeast
  • 1 can Black Beans - rinsed
  • 1 can Corn - rinsed
  • 2 tbsp olive oil
  • Avocado
  • Cheese

How to Make An Adventure in Quinoaland

If you have prepared the ingredients needed, now time to start cooking. There are 9 steps you must follow to make An Adventure in Quinoaland in your home by yourself.

    Step 1
  • Rinse the quinoa thoroughly under cold water. Drain and place in a large pot.
  • Step 2
  • Melt 1tbs butter in a large saucepan over medium heat, and stir in the quinoa. Keep stirring until and the quinoa is very lightly toasted, about 3 minutes.
  • Step 3
  • Pour in the chicken broth, bring to a boil, reduce heat to low, and simmer until the quinoa has absorbed all the broth, about 10-15 minutes.
  • Step 4
  • Turn off heat, add 1tbs butter, fluff with a fork, and let cool.
  • Step 5
  • Drain and rinse corn and beans, then mix in with Quinoa.
  • Step 6
  • Mix together chopped red pepper, yellow onion, corn, black beans, cilantro, green onion, lime juice, olive oil, salt, pepper, cumin, onion powder, garlic powder in a large salad bowl.
  • Step 7
  • Lightly stir in the chicken and quinoa, and additional lime juice to taste, if desired.
  • Step 8
  • Adorn with a slice of melted cheese, and top with sliced avocado. Serve hot, warm, or cold!
