  • 2 medium white onions (diced)
  • 2 large sweet potatoes
  • 45 oz kidney beans (drained)
  • 1/3 tsp oregano
  • 76 oz carton low sodium chicken broth
  • 2 1/2 tsp sea salt
  • 2 tsp ground cumin
  • 1 tsp ground black pepper
  • 1 lb fresh baby spinach
  • 1/2 lb fresh kale (chopped)
  • 4 large chicken breasts (cooked and chopped)
  • 1 large red bell pepper (diced)
  • 1 tsp grated parmesan cheese

How to Make Antioxidant Soup

If you have prepared the ingredients needed, now time to start cooking. There are 4 steps you must follow to make Antioxidant Soup in your home by yourself.

    Step 1
  • Heat oil in large pot over medium-high heat. Saute onions for 5 minutes.
  • Step 2
  • Stir in remaining ingredients except parmesan cheese, and bring to boil
  • Step 3
  • Reduce heat, cover and lightly boil until sweet potatoes are soft. Approximately 12 to 15 minutes
  • Step 4
  • Sprinkle bowl of soup with parmesan cheese and serve.
