  • 4 oz blueberry-vanilla goat cheese; crumbled
  • 1 lemon; zested and juiced
  • 1 T mint; chiffonade
  • 1/4 C pine nuts

  • Toast pine nuts over medium-high heat in a saute pan while tossing frequently to avoid burning until pine nuts are golden brown. Transfer to a bowl.
