  • 1 can apricot halves
  • 2 tbsp cornstartch
  • 3/4 cup beef broth
  • 2 tbsp soy sauce
  • 1 1/2 lb boneless beef top round or sirloin steak, cut into thin strips
  • 1 tbsp canola oil
  • 2 cup fresh broccoli florets
  • 1/2 cup chopped onion
  • 1 cup cherry tomatoes

How to Make Apricot Beef Stir-fry

If you have prepared the ingredients needed, now time to start cooking. There are 8 steps you must follow to make Apricot Beef Stir-fry in your home by yourself.

    Step 1
  • Drain apricots, reserve 1/4 c juice.
  • Step 2
  • Cut apricots in 1/4 & set aside.
  • Step 3
  • In a small bowl, whisk the cornstarch, broth,soy sauce and reserved juice until smooth; set aside.
  • Step 4
  • In a large skilled or wok, stir-fry beef in oil for 3min.
  • Step 5
  • Add broccoli & onion; stir-fry 2-3 min longer or until veggies are crisp-tender.
  • Step 6
  • Stir sauce & to the pan. Bring to a boil; cook & stir for 2 Mon or until thickened.
  • Step 7
  • Add tomatoes & reserved apricots; cook until heated through.
  • Step 8
  • Serve over rice.
