Ingredients: Aubergines Fried in Yogurt

  • 1 large Aubergine
  • 1/2 kg Fresh yogurt
  • cooking oil
  • 1 tsp cumin seeds
  • 1 tsp onion seeds
  • 1 tsp mustard seeds
  • 7 Curry leaves
  • 2 clove Garlic
  • 1/2 tsp Red chilly powder (optional)
  • Salt
  • 1 dried red chilly (chopped in 3 parts)

How to Make Aubergines Fried in Yogurt

If you have prepared the ingredients needed, now time to start cooking. There are 5 steps you must follow to make Aubergines Fried in Yogurt in your home by yourself.

    Step 1
  • Chop the aubergine into thin slices. Grease the non stick pan and fry it. Keep aside.
  • Step 2
  • Wiske the yogurt in a smooth paste in a deep dish. Add salt as per taste. Keep aside.
  • Step 3
  • Take about 1 table spoon of cooking oil in a small fry pan. Once the oil is hot add the cumin, onion and mustard seeds, chopped dried red chilly, curry leaves and chopped garlic. Once it starts changing colour remove it.
  • Step 4
  • Add this on the yogurt. (Optional) If you want it to be a bit spicy then add half a tea spoon of red chilly powder to the hot oil, just before removing it from the fire. And quickly pour it on the yogurt.
  • Step 5
  • Now put the fried aubergines in the yogurt. It's ready to eat. You can eat this with bread or naan.
