  • 1 crazy large overgrown zucchini!
  • 1 lb raw bulk ground italian sausage
  • 1/2 cup parmesan cheese
  • 1 clove minced garlic
  • 1 cup italian style bread crumbs
  • 24 oz spagetti sauce of your choice
  • 8 oz shredded or sliced motzarella cheese

If you have prepared the ingredients needed, now time to start cooking. There are 14 steps you must follow to make Audrey's Italian Stuffed Zucchini in your home by yourself.

    Step 1
  • Preheat oven to 350°F
  • Step 2
  • Wash zucchini, cut off ends, slice zucchini in half lengthwise and scoop out just the seeds only.
  • Step 3
  • In a medium bowl combine raw sausage, bread crumbs, parmesan cheese and minced garlic.
  • Step 4
  • Mix with hands very well. It will be a dough like consistency.
  • Step 5
  • Place zucchini in or on any oven safe dish so the zucchini stays standing up and doesnt tip over........ Stuff the wells of the zucchini evenly.

  • Equally pour spaghetti sauce over each.
  • Step 7
  • Place zucchini into the oven!

  • Bake at 350 for about 60-75 minutes or until sausage is cooked through.
  • Step 9
  • Remove from oven but keep oven set to 350.
  • Step 10
  • Sprinkle motzarella cheese evenly between the two halves. Add more if you love cheese! :)
  • Step 11
  • Place back into oven for 5-15 minutes or cheese is melted and to your liking.
  • Step 12
  • Remove from oven and let cool for 5 min.
  • Step 13
  • Slice it up and serve!
