  • 3 jalapeños; minced

  • 1 pound super sweet corn
  • 1/2 C sugar
  • 1/2 bundle cilantro; chiffonade
  • 2 T "Mexican Dry Rub" ( see my recipes)
  • chile oil; as needed
  • kosher salt; as needed

If you have prepared the ingredients needed, now time to start cooking. There are 4 steps you must follow to make Avocado Taco Topper in your home by yourself.

    Step 1
  • Heat enough chile oil to cover the bottom of a small sauce pan. Add onion and jalapeño. Add a small pinch of salt. Sweat on medium-low heat slowly until onions are nearly caramelized.
  • Step 2
  • Add corn, sugar, bell pepper, avocado, and tomatoes. Stir. Add dry rub and salt. Stir.
  • Step 3
  • When corn is heated through, add cilantro and lime juice. Stir. Serve.
