  • 6 slice bacon,cooked & crumbled
  • 1 green onion chopped fine
  • 3 eggs
  • 2 1/4 cup buttermilk
  • 1/4 cup unsalted butter,melted
  • 2 tbsp veg . oil

    Step 1
  • In large bowl whisk flour, cornmeal, sugar, baking powder, baking soda&salt. Stir in cheese,bacon & green onion.
  • Step 2
  • In separate bowl whisk together eggs, butter milk & butter; pour over flower mixture and stir just until combined. Let stand for 10 minutes
  • Step 3
  • Lightly oil nonstick skillet, over medium heat poor around a quarter of a cup of batter for each pancake, brushing skillet with remaining oil as necessary, cook until underside is golden and bubbles break on top but do not fill in, about 2 minutes turn and cook until underside is golden 30 to 60 seconds.
  • Step 4
  • Of course you want to use maple syrup.
