  • 1 small onion, chopped

  • 3 cup chicken broth
  • 4 tbsp butter, divided
  • 4 cup potatoes, diced
  • 1/4 cup all-purpose flour
  • 16 oz Velveeta, cubed
  • 1 1/2 cup milk
  • salt
  • pepper
  • 1/4 cup sour cream
  • BACON!

    Step 1
  • Brown beef in pan; drain and set in pot you will cook soup in.
  • Step 2
  • In same pan, saute carrots, onions, celery, basil, and parsley until tender in tbsp of butter. About 10 minutes.
  • Step 3
  • In the same pot as the beef, add veggies, broth, and potatoes; bring to a boil.
  • Step 4
  • Reduce heat and let simmer for 10 minutes.
  • Step 5
  • In a small skillet, melt remaining butter. Add flour. Stir for 3-5 minutes on medium heat until bubbly.
  • Step 6
  • Add to soup; bring to a boil. Stir for 2 minutes.
  • Step 7
  • Reduce heat to low. Add cheese, milk, salt, and pepper. Stir until cheese melts.
  • Step 8
  • Remove from heat. Blend in sour cream.
  • Step 9
  • Fry up bacon until crispy. Crumble and stir into soup.
