  • 500 g brinjal
  • 250 g tomatoes
  • 4-5 green chillies
  • leaves fresh coriander
  • 1/2 tbsp ginger-garlic paste
  • 3 tbsp cooking oil
  • to taste salt and sugar
  • Lime juice

    Step 1
  • Wash the brinjals and cut into small pieces.
  • Step 2
  • Chop tomatoes, chillies, coriander and keep aside
  • Step 3
  • Heat the oil in a deep based frying pan. Put the pieces of brinjals in and lightly fry them for a minute.
  • Step 4
  • Add chopped tomatoes, chillies and coriander leaves and ginger garlic paste to the brinjals.
  • Step 5
  • Stir fry till the brinjals and tomatoes soften. Add little bit of water and allow it to dry up.
  • Step 6
  • Add salt and sugar and cook on a low flame for a minute or two.
  • Step 7
  • Remove from flame and serve sprinkling lime juice over.
