  • 1/2 red bell pepper, diced

  • 1 sliced fresh lemon
  • 1 Olive oil
  • 1 salt and pepper to taste

    Step 1
  • Turn oven to 350°
  • Step 2
  • Rub cod with olive oil and season with salt and pepper, or any seasonings of your choice

  • Step 7
  • Add the fresh spinach, and wilt down. Season with salt and pepper to taste.
  • Step 8
  • Once the cod is baked, place on plate and top with vegetable sautee. A squeeze of fresh lemon on top helps bring out all the flavors.
