  • 1 (8 oz) package manicotti shells
  • 2 cup Ricotta cheese

  • 3/4 tsp Dried thyme
  • 3/4 tsp Dried oregano
  • 1/2 tsp Dried parsley
  • 1 1/2 cup Shredded parmesan cheese
  • 1 tbsp Olive oil
  • 1 cup Onion, diced
  • 2 Crushed garlic cloves
  • 2 can Diced tomatoes (28 oz)

    Step 1
  • In a medium saucepan, heat 1 tablespoon olive oil over medium heat. Add the onion and garlic. Cook until translucent, stirrin occassionally. Usually 2-4 minutes.

  • In a large bowl, whisk together eggs, ricotta, thyme, oregano, and 1 cup of parmesan cheese. If needed season with little more salt and pepper to taste.
  • Step 6
  • Coat bittom of a bakin dish with 2 cups of sauce at least
  • Step 7
  • Spoon/pipe cheese mixture into shells.
  • Step 8
  • Line up allowoin a little room between them in the dish as you go along.
  • Step 9
  • Cover with more sauce
  • Step 10
  • Top with remainin cheese
  • Step 11
  • Bake til bubbly and delucious
