  • 3/4 cup sugar
  • 2 eggs
  • 1 1/2 tsp vanilla extract
  • 2 ripe bananas, mashed
  • 1/2 cup milk, buttermilk, coconut milk or almond milk
  • 1 cup shredded coconut, optional
  • 1 cup chopped nuts, optional

  • Preheat oven to 350°F
  • Step 2
  • Line muffin pan with cupcake liners or grease and flour 2, 9 inch cake pans if making cake

  • In large mixing bowl, cream butter and both sugars with hand mixer

  • Fill cupcake liners 2/3 of the way full or pour into cake pans
  • Step 9
  • Bake cupcakes for 18 minutes and cake for 40 to 45 minutes or until tooth pick inserted comes out clean
  • Step 10
  • Makes about 18 cupcakes
