  • 1 cup Ice water
  • 1 quart oil
  • 1 Salt

  • In food processor egg yolks, pinch of S&P, juice of half lemon
  • Step 2
  • Have oil ready to go. Trick is to add oil very slowly

  • Turn on processor, slowly drizzle oil into yolk mixture

  • Should emulsify quickly.
  • Step 5
  • Add water or oil to change consistency. Water will thin it out, oil will thicken
  • Step 6
  • You will have to add salt, pepper, and lemon juice to taste
  • Step 7
  • To make a flavored aioli just add whatever it is.
  • Step 8
  • Heat garlic in oil until it looks wrinkled and brown. Use this oil in place of other for a roasted garlic aioli. Awesome on sandwiches
