  • 2/3 c extra-virgin olive oil
  • 1 tsp Dijon mustard

  • Combine all ingredients in blender. Taste and season as needed. You can add 1 tbsp of fresh lemon juice if the dressing is not zippy enough or add more oil if it is too tangy. Mediterranean: add to the blender 3 anchovies. Quick Caesar: add to the blender 3 anchovies, 1 tsp Worcestershire sauce and 1/2 c grated Parmesan.
