  • 12 Flour tortillas
  • 1 lb Ground beef
  • 1 tsp Black pepper
  • 1 tsp Cumin
  • 1 small onion, diced
  • 1 Green pepper, diced
  • 1 can Green chilies, mild
  • 1 can Red enchiladas, mild
  • 1/2 cup Mexican cheese
  • 2 cup Cheddar cheese

How to Make Beef Enchiladas (red)

If you have prepared the ingredients needed, now time to start cooking. There are 5 steps you must follow to make Beef Enchiladas (red) in your home by yourself.

    Step 1
  • Preheat oven 375. Lightly grease 9x13 casserole dish.
  • Step 2
  • In a large skillet brown ground beef with cumin and black pepper. Drain. Add onion cook for 5 minutes. Add green pepper cook for a few minutes. Add canned green chiles and about 1/4 cup of enchilada sauce.
  • Step 3
  • Spread meat filling and sprinkle Mexican cheese in center of each tortilla. Roll and place in casserole dish.
  • Step 4
  • Once all tortillas are in casserole dish cover with the rest of red enchilada sauce. Add the cheddar cheese.
  • Step 5
  • Bake for 20 minutes-until cheese is melted.
