  • 1 lb Ground beef
  • 1 medium onion, chopped (1/2 cup)
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 2 tbsp parsley flakes
  • 1/4 tsp pepper
  • 1/3 cup chopped bell pepper
  • 2/3 cup water
  • 1 tbsp chili powder
  • 1/2 tsp dried oregano
  • 1/4 tsp ground cumin
  • 2 Green chilies (optional)
  • 1 clove garlic (finely chopped)
  • 15 oz can tomato sauce
  • 8 or more corn tortillas

How to Make Beef Enchiladas

If you have prepared the ingredients needed, now time to start cooking. There are 9 steps you must follow to make Beef Enchiladas in your home by yourself.

    Step 1
  • Preheat oven to 350°F Fahrenheit
  • Step 2
  • Cook beef and onion til beef is brown, drain.
  • Step 3
  • Stir in sour cream, cheese, parsley, and pepper. Cover and remove from heat
  • Step 4
  • In 2 quart saucepan, heat remaining ingredients to boil, them simmer 5 minutes.
  • Step 5
  • Microwave tortillas to ensure they roll without tearing, then dip each tortilla into sauce mixture (cover both sides)
  • Step 6
  • Spoon about 1/4 cup of meat mixture into tortilla, roll up. Continue with the others.
  • Step 7
  • Place, seam down, into an oven safe baking dish.
  • Step 8
  • Pour remaining sauce over enchiladas. Cover with cheese.
  • Step 9
  • Bake 20 minutes, or until cheese is bubbly.
