  • 4 flour tortillas
  • 2 tbsp vegetable oil
  • 1/2 onion, chopped
  • 1/2 red bell pepper
  • 2 clove garlic
  • 1/2 packages dry black beans
  • 1 jalapenos
  • 3 oz cream cheese
  • 1/2 can corn
  • 1 can tomatoes diced
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder
  • 1 tsp salt
  • 2 sprigs cilantro

How to Make Black Bean Burritos

If you have prepared the ingredients needed, now time to start cooking. There are 6 steps you must follow to make Black Bean Burritos in your home by yourself.

    Step 1
  • Rehydrate the black beans by soaking overnight then boiling until soft. (Can use canned black beans rinsed and drained.)
  • Step 2
  • Heat oil in skillet and cook all fresh veggies for 2 minutes stirring occasionally.
  • Step 3
  • Add beans, corn, tomatoes and spices and cook 5 minutes more while stirring.
  • Step 4
  • Cut cream cheese into cubes and add to skillet. Cook 2 minutes then stir in cilantro.
  • Step 5
  • Heat tortillas a few seconds in the microwave then spoon mixture into tortillas.
  • Step 6
  • Serve with salsa and sour cream.
