  • 1 can Black beans
  • 1/2 cup Corn kernels (fresh or frozen, defrosted)
  • 1/2 cup Shredded cheese (Mexican or similar)
  • 1 Egg
  • 1/4 cup Pancake mix
  • 2 tbsp Canola or vegetable oil (for sautéing)

  • Put all ingredients (aside from oil) in food processor and whirl until smooth-ish
  • Step 2

  • Step 4
  • Serve as is or w/ketchup or sour cream
