Ingredients: Bleu Cheese Crusted Filet Mignon

  • 2 tbsp Butter
  • 4 Filet Mignon
  • 2 clove Fresh Garlic (minced)
  • 2 small Shallots- minced (found near onions)
  • 3/4 cup Red Wine (dry)
  • 2/3 cup Beef Stock
  • 1/3 cup Panko Bread Cumbs
  • 5 oz Bleu Cheese Crumbles (divided into 1/3's)
  • 1/2 tsp Blackening Season
  • Salt, Pepper
  • 1 tbsp Parsley Chopped
  • 1 tbsp Fresh Rosemary Chopped

How to Make Bleu Cheese Crusted Filet Mignon

If you have prepared the ingredients needed, now time to start cooking. There are 11 steps you must follow to make Bleu Cheese Crusted Filet Mignon in your home by yourself.

    Step 1
  • Preheat oven to 425°F.
  • Step 2
  • Combine panko bread crumbs, 2/3 of Bleu cheese crumbles, and parsley. (Set aside)
  • Step 3
  • Get gas-grill heated on med-high (you can also use a sauté pan for this step, but I prefer to use the grill.)
  • Step 4
  • Salt and pepper filets, use some of blackening seasoning if you want to spice it up. Then grill each side of filets for 5-8 minutes depending on thickness...This will produce a med-rare...longer times means more cooked.
  • Step 5
  • Put cooked filets in baking pan. Top with bleu cheese/panko/parsley mixture. Set aside.
  • Step 6
  • Sautée shallots and garlic with butter until soft in a large sauté pan. Add wine and reduce.
  • Step 7
  • Add beef stock and rosemary, simmer stirring occasionally and reduce by half.
  • Step 8
  • Add 1/3 blue cheese and mix into sauce until blended. Keep warm.
  • Step 9
  • Put topped filets in oven and brown the bleu cheese topping. About 5-7 minutes.
  • Step 10
  • Remove from oven, top plate with sauce then steak...next step......
