  • 1/4 cup Shredded coconut
  • 5 Large eggs
  • 1 1/2 cup Coconut milk
  • 1/4 cup mesquite honey
  • 1 Zest of 1 lemon
  • 2 tbsp lemon juice
  • 1 tsp cinnamon
  • 1 tbsp vanilla

    Step 1
  • Preheat oven to 350°F. In a large mixing bowl, toss bread cubes, coconut, and blueberries.
  • Step 2
  • Place in a large baking dish.

  • In a medium bowl, whisk eggs, coconut milk, mesquite honey, lemon zest, lemon juice, cinnamon and vanilla.
