  • 1 cup coarsely shredded carrot
  • 1/2 tsp caraway seeds
  • 2 tbsp packed brown sugar
  • 1 pepper to taste
  • 2 lb sauerkraut, rinsed and drained
  • 1 (12 ounce) can beer
  • 4 strips diced bacon

    Step 1
  • Fry bacon in a 2 quart saucepan until crisp.
  • Step 2
  • Remove, drain, and set aside.

  • Bring to a boil, cover, and simmer for 1 hour.
