Ingredients: brioche

  • 1600 grams strong flour/T55 flour
  • 75 grams yeast
  • 12 eggs
  • 60 grams salt
  • 60 grams sugar
  • 75 grams milk powder
  • 700 ml water
  • 600 grams butter (softend)

How to Make brioche

If you have prepared the ingredients needed, now time to start cooking. There are 6 steps you must follow to make brioche in your home by yourself.

    Step 1
  • place flour, salt, sugar and milk powder into mixing bowl
  • Step 2
  • activate yeast in a little water
  • Step 3
  • add eggs and yeast plus sufficient water to form an elastic dough, knead lightly and place into proving cabinet. allow to double
  • Step 4
  • remvoe from prover, return to machine and add the softend butter, mix well- the dough will have a spongy effect
  • Step 5
  • scale of: 50g for rolls; 550g for loaves
  • Step 6
  • roll, shape, glaze, mould and prove. Bake 200 celcius (400 F)
