Ingredients: Broiled Tomatoes

  • 4 large ripe tomatoes
  • 2 tbsp olive oil
  • to taste Salt and pepper
  • 1 garlic clove, minced
  • 1/2 c grated Parmesan cheese
  • 4 tbsp butter, cubed
  • 1/4 c fresh chopped flat leaf parsley

How to Make Broiled Tomatoes

If you have prepared the ingredients needed, now time to start cooking. There are 3 steps you must follow to make Broiled Tomatoes in your home by yourself.

    Step 1
  • Preheat broiler. Wash the tomatoes, and halve each, cutting through the stem end. Set on paper towels, but side down, for about 20 minutes.
  • Step 2
  • Place the tomatoes, cut side up, in a shallow casserole dish. Brush the tops with olive oil. Season with salt, pepper and garlic. Sprinkle with cheese, and dot with butter. Sprinkle with chopped parsley.
  • Step 3
  • Place the baking dish under the broiler until the cheese is bubbly and browned, approximately 3 minutes. Watch closely so as not to burn! Serve immediately. (132 calories/serving; GL=1, Glycals=1)
