  • 3 large eggs
  • 240 g sugar
  • 140 g plain flour
  • 1 teaspoon baking powder

    Step 1
  • Butter and line cake tin/ cupcake moulds. Set oven the gas5/180*C
  • Step 2
  • Separate egg yolks, keep egg whites for later. Add sugar to egg yolk and beat for 2 minutes. Add 75ml warm water to yolks and sugar and continue to beat until light and creamy.
  • Step 3
  • Beat egg whites until stiff peaks form
  • Step 4
  • Carefully fold flour and baking powder into egg/sugar mix. Then carefully fold in egg whites. Be careful not to beat out the air.
  • Step 5
  • Place into cake tin and bake for 15-20 minutes. Once out the oven let cool for a few minutes then remove from tin and place on wire rack to cool completely
