  • 1 head cabbage
  • 2 bunch green onion
  • 1 lb carrots
  • 5 medium potatoes
  • 1/2 cup butter

    Step 1
  • melt butter in a dutch oven or soup pot.
  • Step 2
  • Chop green onion (no bulb) and sautè in butter.Chop cabbage in 1-2" pieces add to pot.
  • Step 3
  • Follow with cut sliced carrots and potatoes. Simmer until carrots and potatoes are tender.30-45 minutes.
  • Step 4
  • Add sliced smoked sausage and simmer for an additional 10-15 minutes.
  • Step 5
  • this can be halved. but it is excellent the next day . makes enough for 8-10 servings.
