  • 4 tablespoons olive oil
  • 14 oz andouille sausage, cut into 1 inch pieces
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced thin
  • 1 1/2 cup cut okra
  • 1 small zucchini, cut into 1 inch slices
  • 16 oz uncooked penne
  • 1 pint heavy cream
  • 2 quarts water
  • 4 chicken bullion cubes
  • 2 tablespoons cajun seasoning
  • 1/2 tablespoon smoked sweet paprika
  • 2 cups Monterey jack cheese, shredded

How to Make Cajun Pasta Casserole

If you have prepared the ingredients needed, now time to start cooking. There are 11 steps you must follow to make Cajun Pasta Casserole in your home by yourself.

    Step 1
  • In large oven safe pot, add olive oil over medium-high heat.
  • Step 2
  • Add sausage, stir. Let it start to brown a bit.
  • Step 3
  • Add garlic and peppers. Stir until fragrant.
  • Step 4
  • Add zucchini and okra to pot.
  • Step 5
  • Add paprika to sausage and veggies in pot. Stir to combine. Cook for just a few moments, then remove from pot and save for later.
  • Step 6
  • Add water and bullion to pot. Bring to boil.
  • Step 7
  • Add pasta to boiling water. Cook 10 minutes.
  • Step 8
  • Add cajun seasoning and heavy cream to pasta pot. Stir to combine. Bring back to boil. Let sauce reduce.
  • Step 9
  • At this point, I stirred in about a half of a cup of my cheese into the sauce to let it get a little extra creamy.
  • Step 10
  • Add the sausage and veggies back into pasta dish.
  • Step 11
  • Top with remaining cheese. Pop in oven under broiler for about 3-4 minutes, just long enough to give it a light golden crust on top.
