Ingredients: Carbonara

  • 1 pack of spaghetti
  • 1 right amount of Parmesan cheese
  • 3 eggs
  • 1 egg yolk
  • 1 plenty of pancetta
  • 1 plenty of fresh black pepper

How to Make Carbonara

If you have prepared the ingredients needed, now time to start cooking. There are 12 steps you must follow to make Carbonara in your home by yourself.

    Step 1
  • Set a pot of water on stove and bring to a boil. Water should be as salty as the ocean, but if your pancetta is salty cut back on salt here
  • Step 2
  • dice pancetta
  • Step 3
  • In a large skillet, fry pancetta until crispy and drain excess fat.
  • Step 4
  • grate parmesan
  • Step 5
  • Combine eggs with grated cheese in mixing bowl
  • Step 6
  • Add pasta, cook to just before all dente
  • Step 7
  • With a ladle, add a scoop of pasta water to egg and cheese mixture to help it emulsify (in mixing bowl)
  • Step 8
  • With a pair of tongs, transfer pasta to skillet with pancetta
  • Step 9
  • Add egg and cheese mixture to pasta in skillet.
  • Step 10
  • Add pasta water as needed and heat on low flame to get desired consistency.
  • Step 11
  • Add black pepper to taste
  • Step 12
  • Garnish with fresh chives
