  • 8 carrots; peeled
  • 2 shallots; sliced in thin rings
  • 1/4 C raisins
  • 3/4 C orange juice
  • 1 orange; zested
  • 1/4 C brown sugar
  • 1/2 C honey
  • 1/4 C pine nuts
  • 3/4 t ground cardamom
  • 1 drizzle extra virgin olive oil
  • 1 small pinch kosher salt

How to Make Cardamom Roasted Carrots

If you have prepared the ingredients needed, now time to start cooking. There are 4 steps you must follow to make Cardamom Roasted Carrots in your home by yourself.

    Step 1
  • Pour orange juice in the bottom of a small roasting pan, casserole dish, or small oven safe pan. Add raisins and shallot rings. Place carrots atop bed of shallot rings. Drizzle olive oil over carrots. Season with orange zest, cardamom, and a pinch of kosher salt. Top with pine nuts.
  • Step 2
  • Bake uncovered at 350┬░ for approximately 30 minutes or until carrots are tender and nicely caramelized.

  • Glaze with honey during last 5 minutes of cooking.
