  • 2 cup carrots (about 1.5 cans)
  • 3 each eggs
  • 1 tsp vanilla
  • 6 tbsp flour
  • 2 tsp baking powder
  • 1/4 tsp cinnimon
  • 1 1/4 cup sugar

    Step 1
  • preheat oven to 400°
  • Step 2
  • melt butter in 8x8 baking dish.
  • Step 3
  • mash carrots as smooth as possible
  • Step 4
  • add well beaten eggs

  • use melted butter to grease the sides if the dish. Pour remaining butter into carrots
  • Step 6
  • add vanilla
  • Step 7
  • in a separate bowl combine dry ingredients

  • add dry ingredients to carrots mix throughly

  • pour mixture into pan and place in a 400° oven for 12 minutes
  • Step 10
  • Reduce temperature to 350° and continue to cook for 40-45 minutes. Casserole should be firm some cracking across the top.
