  • BASE
  • 2 eggs
  • 4 carrots
  • 1 ginger (as much as you like)
  • 2 tbsp grated orange peel
  • 1/2 cup melted butter
  • 4 tbsp light brown sugar
  • 2 tsp vanilla sugar
  • 1 cup flour
  • 2 tsp baking powder
  • 1 cup ground almonds
  • CREAM
  • 250 grams mascarpone cheese
  • 2 tbsp light brown sugar
  • 1 vanilla bean
  • 2 tbsp grated lemon or lime peel
  • DECORATION
  • 1 toasted chopped white almonds

How to Make Carrot ginger cake

If you have prepared the ingredients needed, now time to start cooking. There are 4 steps you must follow to make Carrot ginger cake in your home by yourself.

    Step 1
  • Put 2 whole eggs in the bowl. Finely grate carrots and ginger and mix with eggs. Add melted butter, brown and vanilla sugar and mix it on low speed till sugar is melted. Add all other ingredients and mix it 3-5 min.
  • Step 2
  • Bake it 30-40 min on 160 deegres.
  • Step 3
  • While base is baking, prepare cream. In the bowl put mascarpone cheese, sugar, vanilla bean and grated lemon peel. Mix it 5-7 min.
  • Step 4
  • When base is baked and still warm a little, put cream. Decorate with toasted chopped white almonds. Enjoy :)
