  • 1/4 cup butter
  • 1 cup onion, chopped
  • 3 cup carrots (peeled and chopped)
  • 1 large potato (peeled and cubed)
  • 1 celery
  • 3 cup chicken broth or vegetable broth
  • 1 tsp ground or fresh ginger
  • 1/2 cup milk
  • 1 tsp curry powder
  • 1/2 tsp salt
  • 1 black pepper (to taste)

How to Make Carrot ginger soup

If you have prepared the ingredients needed, now time to start cooking. There are 3 steps you must follow to make Carrot ginger soup in your home by yourself.

    Step 1
  • Heat butter over low/medium heat, saute onions until translucent
  • Step 2
  • Add carrots, potato, celery, broth and ginger. Cover and bring to boil. Reduce to low heat, simmer for approx 30 min or until vegetables tender. Stir occasionally.
  • Step 3
  • Blend until smooth. Stir in milk, curry, salt and pepper. Simmer over low heat until heated through and reaches desires consistency (approx 10 min)
