  • 3 1/2 cup water (divided)
  • 3 cup pineapple juice (divided)
  • 3/4 cup fresh squeezed lemon juice
  • 1 ice
  • 1 lemon wedges for garnish

  • In a medium saucepan, combine carrots and water.
  • Step 2
  • Bring to a boil.
  • Step 3
  • Reduce heat and cover.

  • Simmer 30 minutes or until very tender.

  • Transfer mixture to a blender.
  • Step 7
  • Add 1 cup of the pineapple juice.

  • Cover and chill 2 to 24 hours. (Mixture may thicken upon standing, so stir in 1 to 2 cups water to desired consistency.)
