  • 3/4 cup dry bread crumbs
  • 3 tbsp grated Parmesan cheese
  • 2 tbsp fresh parsley (chopped)

  • 1/4 tsp each pepper, dried oregano and basil (1/8 preferred)
  • 6 fresh or frozen catfish fillets (4 ounces each)
  • 3 egg whites (beaten)

    Step 1
  • In a shallow bowl, combine the bread crumbs,Parmesan cheese, parsley and seasonings.
  • Step 2
  • Dip catfish in egg whites,then in the crumb mixture.
  • Step 3
  • Arrange in a baking dish with coated nonstick cooking spray (13-in. x 9-in. x 2-in. dish)
  • Step 4
  • Lightly spray fillets with the nonstick cooking spray.
  • Step 5
  • Bake (uncovered) at 375° for 20-25 minutes or until the fish starts to flakes with a fork.
  • Step 6
