    Step 1
  • Bring 1 1/2 cups of the milk to a simmer in a large saucepan over medium heat.
  • Step 2
  • Whisk the cornstarch and remain 1/4 cup milk together, then stir into the simmering milk. Continue to cook, whisking often, until the sauce has thickened, about 2 minutes.
  • Step 3
  • Off the heat, stir in the cheese and cayenne pepper until the cheese is melted and smooth. season with salt to taste.
