  • 8 medium russet potatoes peeled and thinly sliced
  • 1 large onion (I prefer purple or walla walla ) cut in half and then slice thinly
  • 1 can cream of mushroom soup
  • 1 packages velveta cheese cut into small cubes
  • 1 cup milk
  • 1 small tub of sour cream
  • 1 salt to taste
  • 2 cup shredded chedder cheese

    Step 1
  • place potatoes and onion in a large bowl and cover with cold water mix together potatoes and onion and add salt and set aside
  • Step 2
  • in a metal mixing bowl add all other ingredients except shredded cheddar cheese, and place over a pot of boilin water to melt together
  • Step 3
  • drain water from potatoes and lay out in a deep 9x11" baking dish, spread the melted mixture on and carefully mix it together.
  • Step 4
  • cover with foil and bake at 350' for about 1 1/2 hrs then remove foil and add shredded cheese and cooked uncovered until it begins to get golden brown
