  • 1 1/2 stick butter
  • 1 1/2 cup chopped onion
  • 1 1/2 cup chopped celery
  • 2 1/2 cup fresh broccoli florets
  • 2 cup fresh cauliflower florets
  • 1 can cream of mushroom soup
  • 1 can cheddar cheese soup
  • 4 oz cream cheese ( half block)
  • 2 cup chopped fresh spinach
  • 3 cup rice ( I used leftover, precooked. Can use uncooked)
  • 1 1/2 cup shredded cheddar cheese
  • 1 1/2 cup shredded mozzarella cheese
  • 1 cup milk
  • 1 pepper to taste
  • topping
  • 1 panko bread crumbs
  • 1 shredded cheese
  • 1 a few slabs of butter on top

    Step 1
  • preheat oven to 350º
  • Step 2
  • in large pan on med-low heat, warm butter, celery, and onion until softened
  • Step 3
  • add broccoli and cauliflower to pan
  • Step 4
  • add both cans of soup and cream cheese to heated mixture
  • Step 5
  • transfer mixture to large mixing bowl. Add spinach, rice, cheese, milk, and pepper
  • Step 6
  • mix well. pour into 13x9 in. casserole dish. Top with toppings if desired.
  • Step 7
  • bake for 25-30 minutes uncovered
