  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 2 tsp salt
  • 2 tsp dried rosemary
  • 2 tsp dried thyme
  • 1/4 tsp pepper
  • 2 large baking potatoes
  • 1 lb baby carrots
  • 12 cloves garlic, minced
  • 8 oz small white mushrooms
  • 2-4 chicken breasts

How to Make Chicken & Garlic Vegetables

If you have prepared the ingredients needed, now time to start cooking. There are 9 steps you must follow to make Chicken & Garlic Vegetables in your home by yourself.

    Step 1
  • Preheat oven to 450 degrees.
  • Step 2
  • Combine lemon juice, olive oil, salt, rosemary, thyme, & pepper in a small bowl & mix well.
  • Step 3
  • Cut potatoes into chunks, peeling first, if desired. Combine potatoes, carrots, garlic, & mushrooms in large bowl.
  • Step 4
  • Add 2tbsp of lemon juice mixture & toss until everything is coated.
  • Step 5
  • Cook vegetables in oven for 30 minutes.
  • Step 6
  • Dip chicken brests in remaining lemon juice mixture & place chicken on top of vegetables. Pour any leftover lemon juice mixture over chicken.
  • Step 7
  • Reduce heat to 375 degrees.
  • Step 8
  • Bake for an additional 25 minutes.
  • Step 9
  • Let set for 5 minutes. Serve.
