  • 500 g chicken breast
  • 1 tbsp olive oil
  • 1 lemon, zested and juiced
  • 1 red onion, thinly sliced
  • 1 clove garlic, crushed
  • 1 broccoli
  • 1 large red chili, seeded and finely chopped
  • 150 g couscous
  • Fresh parsley, roughly chopped

If you have prepared the ingredients needed, now time to start cooking. There are 3 steps you must follow to make Chicken and broccoli couscous in your home by yourself.

    Step 1
  • In a bowl, toss the sliced chicken with the oil and half the lemon juice. Heat a large nonstick frying pan and add the chicken, garlic and onion. Cook for 8-10 minutes, stirring, until the onion has softened and the chicken has cooked through.
  • Step 2
  • Cook the broccoli in a large pan on booking water for 4 minutes, then drain and add it to the chicken along with the chilli. Stir and cook for another 2 minutes.
  • Step 3
  • Meanwhile, put the couscous in a bowl and pour over enough boiling water to cover. Leave to stand for 2-3 minutes, until all the water has been absorbed. Fluff up with a fork, and site in the chicken along with the zest, parsely and lemon juice
