  • 4 Chicken drumettes - the first (thickest) joint of a chicken wing
  • 1 pack Maitake mushrooms
  • 1/2 Onion (large)
  • 1/2 Tomatoes (large)
  • 1 tabespoon Goji berries
  • 200 ml Water
  • 1 tsp Salt
  • 1 pinch Black pepper
  • 2 tsp Soy sauce
  • 1 Dried herbs (marjoram, oregano)
  • 1 Fresh parsley
  • 1 tbsp Olive oil

    Step 1
  • These are the dried goji berries. You can also use them dried in desserts. I used these for this simmered dish.
  • Step 2
  • Season the chicken drumsticks with the dried herbs, salt, and pepper. Marjoram helps with digestion.

  • Cut the onion into 5mm slices. Wash and tear apart the maitake. Chop the tomatoes. You can leave the skin on or peel, whichever you prefer.
  • Step 4
  • Heat olive oil in an enamel pot. Add the chicken drumsticks and cook lightly. When the chicken begins to lightly change color, add the water.
  • Step 5
  • Cover with a lid and leave it until it begins to boil. Once it begins to boil, drop the heat to low.
  • Step 6
  • Add, in order, the tomato, maitake mushrooms, and goji berries. Cover with a lid and simmer for 15-20 minutes.
  • Step 7
  • Season with salt, pepper, and soy sauce. Stop the heat and let it steam for a short time to finish.
  • Step 8
  • Garnish with digestion aiding and mineral filled parsley and then enjoy. The chicken will become so tender and delicious. You can also enjoy the goji berries.
