  • 1/2 cup white quinoa
  • 1 1/2 cup coconut milk
  • 1 tsp vanilla extract
  • 2 tsp pure maple syrup
  • 1/2 tsp ground cinnamon
  • 3 tbsp dark cocoa powder
  • 2 tbsp shredded coconut (unsweetened And/or Toasted)
  • 1 vanilla ice cream (leave out or sub for vegan style)
  • whipped cream (do not add if vegan style or substitute with whipped coconut cream)
  • brown sugar for sprinkling (for those who like it a lil bit sweeter)
  • coconut milk

How to Make Choco-Coco Quinoa "Rice" Pudding

If you have prepared the ingredients needed, now time to start cooking. There are 7 steps you must follow to make Choco-Coco Quinoa "Rice" Pudding in your home by yourself.

    Step 1
  • Rinse quinoa.
  • Step 2
  • Mix coconut milk and quinoa in a saucepan and bring to a boil.
  • Step 3
  • Once at boiling add vanilla extract and maple syrup. Stir well lower heat and cover pan. *sometimes i add a cinnamon stick before i simmer the pudding)
  • Step 4
  • Let simmer 15 mins. No peeking!
  • Step 5
  • Remove from heat and let sit another five minutes.
  • Step 6
  • Add cocoa powder. Stir in a little extra coconut milk if it seems too thick for your liking. Sprinkle the shredded coconut, brown sugar and cinnamon over a dollop of vanilla ice cream and whip cream on top!!
  • Step 7
  • Serve hot or cold. :)
