Ingredients: Chocolate Irish Ice-Cream

  • For the ice-cream
  • 8 tbsp Irish Cream
  • 300 ml Extra Thick Double Cream
  • 300 ml Semi-skimmed Milk
  • 125 grams Caster Sugar
  • 1 tbsp Vanilla Extract
  • 3 Egg Yolks
  • 200 grams Dark Chocolate Drops

How to Make Chocolate Irish Ice-Cream

If you have prepared the ingredients needed, now time to start cooking. There are 8 steps you must follow to make Chocolate Irish Ice-Cream in your home by yourself.

    Step 1
  • Cream the egg yolks and 25g of the sugar together in a heat proof bowl.
  • Step 2
  • Place the milk, cream, vanilla extract and remaining sugar in a heavy based pan and bring to boil.
  • Step 3
  • Pour a little of the heated milk over the egg yolks whisking as you do. Then pour the rest in.
  • Step 4
  • Return the custard mix to the pan on a low heat and keep whisking.
  • Step 5
  • Add 25g of the chocolate. Keep whisking the custard until thickened. ( Good test - place a spoon in, pull out and use your finger to make a line on the back of spoon. If it does not fill in it's ready)
  • Step 6
  • Once ready, tip out in to a heat and freezer proof tub, leaving to cool fully.
  • Step 7
  • Once cooled, add the irish cream and remaining chocolate drops.
  • Step 8
  • Place the mixture in the freezer to set. Stir every 30-60mins to break down ice.
