  • 1 cup cold heavy whipping cream
  • FOR THE RASBERRY CHEESECAKE
  • 8 ounces cream cheese, at room temperature
  • 1/3 cup rasberry jam
  • 1/2 cup confectioner's sugar
  • 1 teaspoon vanilla extract
  • 1 cup cold heavy whipping cream
  • FOR THE WHITE CHOCOLATE CHEESECAKE
  • 8 ounces white chocolate, chopped, not chips
  • 8 ounces cream cheese, at room temperature
  • 1/2 cup confectioner's sugar
  • 1 teaspoon vanilla extract
  • FOR GARNISH
  • fresh rasberries
  • chocolate shavings
  • 2 ounces semi sweet chocolate melted for drizzling
